Overnight Breakfast Berry Oats

What exactly are overnight oats? These are a no-cook method of making oatmeal. Instead of cooking your oats on the stove, you mix rolled oats with liquid and other mix-ins, and let it rest in your fridge overnight.

Popularly made in nice sturdy mason jars, it’s a quick healthy breakfast or snack option for you and the kids. I sometimes make 5 to 7 jars a weekend so I can grab these anytime for rest of the week.

What’s great about this is you can substitute the ingredients to whatever you feel like to amp up the nutrients or create the flavors you want. I literally could not stop making yummy noises when I first tried this and neither would you!

*makes 2 jars

INGREDIENTS
Mix-ins:
¼ cup berries 
(choose one or mix strawberries, blueberries, cranberries, raspberries)
Base:
1/3 cup yogurt (Greek or plain regular yogurt)
3/4 cup rolled oats
2/3 cup unsweetened milk of your choice
1 tablespoon chia seeds or ground flax seeds
1/2 teaspoon vanilla extract
pinch of salt
2 tablespoons honey or maple syrup

DIRECTIONS
Whisk all ingredients together in a large mixing bowl. You can choose to add berries whole or chop them up for better blending of flavors. Spoon into a jar with a nice secure lid. Cover and let rest in your fridge for at least 4 hours, or ideally overnight.
Versions:
• Gluten-Free: Use gluten-free oats.
• Vegan: Use plant-based or nut milks, plant-based yogurt, and maple syrup or plant sweeteners like stevia
• Sugar-Free: Drop the sweetener and add 1/2 mashed overripe banana.

Mango Tatin Tartlets


Is there anything better than Philippine Mangoes? Admittedly, in my travels, I have not tasted anything that can compare to the mangoes we have here in our own country. This recipe is another way to enjoy mangoes in a delectable dessert you can make right at home with prepared puff pastry dough that makes baking so much easier!

Ingredients:

250 grams puff pastry 
4 ripe mangoes (or Frozen Mangoes 20% Off for a limited time!) 
Lemon zest 
50 grams butter 
50 grams sugar 
100 ml vanilla ice cream

Directions:

Prepare the mangoes.It is best to choose mangoes that are sweet but are not yet over ripe so they hold their shape better in the baking process. Slice off the fleshy part of the mango on both sides of the core. To make slices easily, hold mango halves with skin on and score vertically from top to bottom with a knife (being careful not to slice through the skin), and scoop them out with a spoon.

Melt butter in pan, add sugar and the mango slices. Let caramelize for around 5 minutes on low heat.

Put the mangoes carefully inside each tartlet mold, and cover with the puff pastry. Use a spoon to tuck in the edges of the puff pastry inside the mold, being careful not to touch the caramel.

Cook in the oven for about 10 minutes in preheated oven at 210°C ( 410 °F). Reduce the heat to 170°C (330°F) for 25 to 20 more mins. Check regularly.

Take out of the oven and let cool for 1 to 2 mns. Flip the tarts on plates. And decorate with lemon zest and a spoon of vanilla ice cream.

Smoked Salmon Spaghetti with Arugula

Nothing says restaurant gourmet better than a well executed and seasoned salmon dish. Try this simple yet flavorful dish for your next family lunch, and keep your family coming back for seconds and even thirds!


Ingredients:

250 grams Smoked Salmon, chopped (20% off until Sep. 13)
250 grams Spaghetti 
2 tbsp olive oil
2 tbsp capers
2 tsp lemon rind
3 cloves of garlic, chopped
100 grams rocket arugula
Salt and pepper

Directions:

Take out salmon slices from packaging and chop.

Cook pasta in a pot, according to package directions, until tender. Drain water and set the pasta aside. In the same pot, add olive oil and sauté the garlic until soft. Add in the pasta, salmon, capers, lemon rind, and rocket arugula.

Continue to cook under low heat for 2 to 3 minutes or until rocket arugula starts to wilt. Add salt and pepper to taste. Serve and enjoy!
