This recipe is unbelievably easy to prepare. It needs only a handful of ingredients but makes for a wonderful main course with guests. Best served with potato gratin to create a special occasion meal. 

INGREDIENTS

1 pack Gerald.ph duck breasts
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 tablespoons honey
3 tablespoons balsamic vinegar
chopped walnuts if desired

Potato Gratin

1 pack Gerald.ph potato slices
300 ml Gerald.ph whipping cream
300 ml full cream milk
1 small knob butter
1 clove garlic minced
2-3 sprigs fresh thyme
Pinch of nutmeg
50g Gerald.ph grana padano grated cheese


DIRECTIONS

Duck Breasts

1.Cut 3 -4 small slits in the skin side of the duck breast, without slicing all the way into the flesh. Season the duck on both sides with the salt and pepper.

2. Preheat a large skillet over medium-high heat and sear the duck breasts, skin side down, for 7 minutes, reducing the heat to medium-low after 3 minutes. Flip the duck breasts over and cook them for an additional 4 to 5 minutes.

3. Transfer them to a plate and cover it with foil to retain warmth.

4. Set aside the duck fat into a clean container and save it for other culinary uses. I use it for sautéing and stir frying and find it adds more flavor.

5. Turn the heat up to medium and deglaze the skillet with the honey and balsamic vinegar scraping up the browned bits as the sauce cooks. Simmer the honey balsamic glaze for 2 to 3 minutes, until it turns slightly thick. Season it with just a dash of salt.

6. Return the duck breasts to the pan, turning them a few times to coat them evenly with the glaze. Carve them and serve them immediately, garnished with a drizzle of extra glaze and some chopped walnuts if desired.

Potato Gratin

1. Preheat the oven to 160C/Gas 4/fan oven 140C. Rub the butter all over the surface of a gratin dish, about 18x28cm/7x11in.

2. Pour the milk and cream into a saucepan. Add the garlic and thyme .Slowly heat the milk and cream mixture until simmering then turn off heat. Strain the liquid into a large jug, sprinkle in the nutmeg and keep warm.

3. Layer half the potato slices in the dish, slightly overlapping the slices and sprinkling with a little salt and freshly ground pepper between each layer. You don’t have to be too neat with the lower layers, but keep some of your best slices for later, so the top looks good.

4. Pour half the hot milk and cream over the potatoes, then finish off layering the rest of the potatoes (arranging them a bit more carefully this time). Pour over the rest of the hot milk and cream. Scatter the cheese over the top and bake for about one hour, until golden and tender. Leave the dish to stand for about 5 minutes, then serve sprinkled with a few fresh thyme leaves.

Moroccan Chicken Pearl Couscous


Weeknights call for quick cooking dishes, and for this, Pearl Couscous is an excellent choice. It cooks in minutes and with it you can create from simple to the fanciest of meals. Try this recipe tomorrow night and have extra time to spare for the other items on your to-do list. Let’s get started!


INGREDIENTS

1 cup Pearl Couscous
2 tablespoons extra-virgin olive oil
1 1/4 pounds skinless, boneless chicken breasts, cut into 1 1/2-inch pieces
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
2 carrots, thinly sliced
1 15-ounce can no-salt-added chickpeas, drained and rinsed
1/4 cup chopped dried apricots or prunes
1 large onion, chopped
Salt and freshly ground pepper
Grated zest of 1/2 lemon, plus juice of 1 lemon
½ cup fresh cilantro

DIRECTIONS

Boil the carrots in a saucepan until tender, and set a side with the water. In a large skillet, add the oil and chicken seasoned with salt and pepper. Cook until browned, and set aside. In the same skillet, add the onion with a pinch of salt until onions are lightly browned, and stir in cumin and cinnamon, remove from pan and set aside.

In the same skillet, add the couscous, chickpeas, apricots and lemon zest, and hot cooking water used for the carrots, and mix together. Add the chicken with its drippings. Cover and let stand until the liquid is absorbed and the couscous is tender, about 5 minutes; fluff with a fork. Stir in the lemon juice and cilantro. Season with salt.

What exactly are overnight oats? These are a no-cook method of making oatmeal. Instead of cooking your oats on the stove, you mix rolled oats with liquid and other mix-ins, and let it rest in your fridge overnight.

Popularly made in nice sturdy mason jars, it’s a quick healthy breakfast or snack option for you and the kids. I sometimes make 5 to 7 jars a weekend so I can grab these anytime for rest of the week.What’s great about this is you can substitute the ingredients to whatever you feel like to amp up the nutrients or create the flavors you want. I literally could not stop making yummy noises when I first tried this and neither would you!

INGREDIENTS

Mix-ins:
¼ cup berries
(choose one or mix strawberries, blueberries, cranberries, raspberries)

Base:
1/3 cup yogurt (Greek or plain regular yogurt)
3/4 cup rolled oats
2/3 cup unsweetened milk of your choice
1 tablespoon chia seeds or ground flax seeds
1/2 teaspoon vanilla extract
pinch of salt
2 tablespoons honey or maple syrup

DIRECTIONS

Whisk all ingredients together in a large mixing bowl. You can choose to add berries whole or chop them up for better blending of flavors. Spoon into a jar with a nice secure lid. Cover and let rest in your fridge for at least 4 hours, or ideally overnight.

Versions:
Gluten-Free: Use gluten-free oats.
Vegan: Use plant-based or nut milks, plant-based yogurt, and maple syrup or plant sweeteners like stevia
Sugar-Free: Drop the sweetener and add 1/2 mashed overripe banana.

Salmon is one of the most versatile fish to include in any recipe. Cook it in casseroles, or add it to pastas, even salads. How about a salmon burger? Fun for the kids to eat and easy for you to make. Let’s get started.


INGREDIENTS

1 pc of GERALD.ph Salmon Fillet Portions, baked and flaked
1 egg, beaten lightly
1/2 cup bread crumbs
1 garlic clove, minced
Lemon juice and zest (1 lemon)
1 tsp. Worcestershire sauce
Red pepper flakes, a pinch
2 tbsp. Dill, minced
1 tbsp. Dijon mustard
Salt & Pepper, to taste
1 tbsp. olive oil
Burger buns
Romaine Lettuce
Tomato, Red onion, sliced

DIRECTIONS

Season Salmon with salt and pepper, put in a baking sheet and bake in 450°F preheated oven for 8 to 12 minutes, or until flaky. Cool, and flake the flesh with a fork.

To make the patty, combine the salmon with egg, bread crumbs,lemon zest and juice, dill, mustard, Worcestershire sauce, red pepper flakes, and garlic. Season with salt and pepper. Mix to fully combine, and form into three to four patties.

Heat oil in a skillet, add the patties and cook until golden, about 3 minutes per side. Serve patties on buns with romaine and onions.
