Free-Range Chicken on Spicy Rice

 

I feel more confident serving my family free-range chicken because I know I am giving them chicken that has more nutrients compared to the regular kind. Go ahead and enjoy this flavorful dish that has a bit of a kick. Excellent for improving your family's appetite for lunch!

INGREDIENTS

For the rice

250 g rice preferably Organic Rice
1 tablespoon curry powder
2 chili (crushed)
Salt

For the coquelet

500 g Free-Range Chicken Drumsticks
4 tablespoons vegetable oil
4 garlic cloves, minced
2 tablespoons soy sauce
2 tablespoons chives (minced)
Salt & pepper to taste

DIRECTIONS

Pour 1.5 liters of water in a casserole. Add curry powder and salt, then the rice. Let boil until rice is cooked.
Drain the rice in a strainer and then add the crushed chili.
Preheat the oven to about 210 °C (410 °F).Mix the vegetable oil, minced garlic, soy sauce, salt, and pepper. Pour this sauce mixture in a large ovenproof casserole. Add the chickens and coat it all over with the sauce. Bake in the oven for 30-40 minutes, continually brushing the sauce on the chicken from time to time. 5 minutes before the chicken is done, put the rice in the oven to reheat.To serve: transfer the rice onto a large serving platter and place the cooked chickens on top. Coat with the rest of the sauce and chicken juices. Sprinkle with minced chives.

Balsamic-Glazed Salmon Portions


Fatty fish like Salmon is one of the recommended dishes for people with diabetes since it is rich in omega-3 fatty acids, which are especially important for diabetics who have an increased risk of stroke and heart disease. This recipe is another quick-cooking crowd favorite for you to try. Let's get started!

INGREDIENTS

2 pcs salmon fillet portions 
2 Tbsp balsamic vinegar 
1 Tbsp olive oil 
1 Tsp honey 
1 Tbsp dijon mustard 
1 Tbsp rice vinegar (optional)
1 Tbsp lemon juice
pepper

DIRECTIONS

Mix all liquid ingredients plus pepper in a small bowl. Pour this mixture over salmon and allow to marinate for 20 minutes. Place piece of tin foil on a baking sheet and spray with cooking spray. Place the salmon on the baking sheet and bake in an oven preheated to 400 degrees F for 8 to 12 minutes.

Salmon Roast For Two

 

Very few tops a home cooked heart healthy meal to set a romantic mood. The effort you put into it plus the warm feeling of privacy dining at home sets the right tone. Try this Salmon Recipe that is both easy to do and delicious, with generous omega-3 that’s good for heart health.

INGREDIENTS

Salmon Filllet Portions (2 portions)
Pinch of pepper
Pink of smoked paprika
1 tbsp maple syrup
1 tbsp Dijon Mustard
Olive oil

DIRECTIONS

Pan frying salmon is the easy way you can make this recipe, but if you prefer less oil, you can opt to bake it instead, which is my preferred version.

For Baking, preheat the oven to 450°F. While preheating, prepare the sauce: Combine the maple syrup, mustard, paprika, salt, and pepper.

Prepare the baking sheet by lining it with aluminum foil, and applying a coat of olive oil or cooking spray. Put the fillets on the baking sheet and brush with the mustard mixture, making sure it is coated evenly on all sides. Put the oven to roast for 8 to 12 minutes.

Depending on the thickness of the salmon, this process can increment by 1 to 2 minutes. If less than an inch thick, start checking for doneness after 6 minutes. You can check this by carefully poking through the fillet with a fork to see if it flakes apart. Uncooked fish has a translucent color and spongy texture. If still uncooked, keep checking every 1 minute.

Serve in a nice serving dish green some beans and herbed rice for a nice complete meal.
