Hearty Healthy Bulgur Salad

 

This is a great recipe for salad that is a meal on its own. It is quick to prepare and has a rich nutty flavor with the use of bulgur, a rich grain that practically smells like caramel popcorn as you cook it. For gluten-free version use gluten-free grains like quinoa. Let’s get started!

INGREDIENTS

1 cup bulgur, cooked
2 tbsp shallots, chopped
1 cup carrots, shredded
1/2 cup cherry tomatoes, sliced
1 tbsp organic cilantro
2 tbsp mint herb
1 tsp cumin
a dash of cayenne pepper
4 tbsp honey-roasted almonds
1 tbsp olive oil
3 tbsp lemon juice
salt and ground pepper

DIRECTIONS

Cook bulgur as indicated in instructions.

In a bowl, make the salad dressing: mix olive oil, lemon juice, cumin, cayenne and season with pepper.

Once the bulgur is cooked, toss with the salad dressing.

Add in the shredded carrots, tomatoes, shallots, cilantro, mint, and almonds.

Toss gently then season with salt and pepper.

Serve and enjoy!

Easy Oven Baby Back Ribs

 

INGREDIENTS

2 racks pork ribs about 6 lbs
1 jar barbecue sauce

Dry Rub

1/2 cup brown sugar
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 tablespoon chili powder
2 teaspoon cumin
2 tablespoons smoked paprika
1-2 teaspoons cayenne pepper depending on the heat level you like

DIRECTIONS

Preheat oven to 275 degrees F. Put all spices together in a bowl. This will serve as your dry rub. Rinse pork ribs and pat dry with paper towels. Remove the membrane from the back of the pork ribs. This ensures flavor is absorbed from the rub. Wrap ribs in foil tightly and place on baking sheet meat side up.

Put the ribs in oven and bake for 2 hours until fork tender. Open the foil and drain the liquid. Brush with barbecue sauce of your choice, and broil for 5 minutes, to get that slightly browned, caramelized texture. Take from the oven, and rest 5-10 minutes before cutting.

Quick Strawberry Sorbet


Even in the rainy months, a cool dessert is still a welcome treat for days when the temperature gets too humid. You can make the dark gloomy days feel summery with this cool easy-to-make dessert using ready-to-use fruit purée of your choice! This is also a great gluten-free and dairy-free dessert alternative. Let’s get started!

INGREDIENTS

6 cups strawberry fruit purée
1/2 cup water
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/2 cup sugar

INSTRUCTIONS

Combine water, lemon juice, vanilla and sugar in a small saucepan. Heat over medium heat, stirring, until sugar has dissolved.
Stir the syrup into the fruit puree. Chill the mixture in the refrigerator until cold, about 4 hours.
Pour the sorbet mixture into an ice cream maker.
If you don’t have an ice cream maker, freeze the mixture in a shallow metal cake pan or ice cube trays until solid, about 6 hours. Break into chunks and process in a food processor until smooth, stopping to scrape down the sides as needed.

INGREDIENTS

1 rack of lamb
1/4 cup olive oil
3/4 tsp salt
1/2 tsp ground pepper
1 tbsp vegetable oil
2 tbsp Dijon mustard
1 garlic clove, minced
1/4 cup seasoned breadcrumbs
1 tbsp grated parmesan

to prepare the beans:

1/2 pack extra fine green beans (unthawed)
1/2 tbsp butter
1 garlic clove, crushed
salt to taste

DIRECTIONS

Season rack of lamb with salt and pepper on all sides. Heat medium-sized skillet and add oil until almost smoking and sear the lamb on both sides until it reaches a nice brown color, about 6 minutes.

Set the lamb on a plate and let cool slightly.

Preheat oven to 450 deg F.

Combine the mustard and garlic and spread mixture all over the lamb. Combine the breadcrumbs and cheese and press onto the mustard to create a crust on the lamb.

Place the lamb on a baking sheet and cook for 12 to 15 minutes. Let rest for 5-10 minutes.

Prepare the beans while the lamb is cooking or resting. Melt the butter in a skillet over medium heat, and add the beans and garlic and cook until the beans begin to thaw. Season with salt and cook and stir until the beans are lightly browned, about 5 to 10 minutes.

Carve the lamb into individual chops to serve with a helping of the sautéed green beans and red wine.
