Apricot-Glazed Duck

An exquisite fusion of sweet and salty, summer and winter. You will love this quaint dish that is surprisingly simple to prepare. With only 5 ingredients, you can serve a luscious meal that will surely wow your guests. 

INGREDIENTS

200 g duck breast fillets
6 frozen apricots
Herbes de provence
Salt and peppercorns

DIRECTIONS

Defrost the apricot slices.

Heat a non-stick frying pan and brown the apricots for a few minutes on both sides. Add a tablespoon of water at the end of cooking to make the texture syrupy then set aside.

In the same pan, cook the duck slices until golden brown then season with salt and peppercorns.

Add the melting apricots at the end of cooking, sprinkle with herbes de provence and heat for a few minutes.

Serve immediately and enjoy!

Egg White Omelet with Spinach & Cottage cheese


A wholesome breakfast is just the right way to start the day. This healthy habit may help positively improve control of blood sugar and insulin sensitivity, especially essential for people with diabetes. 

An omelet is an excellent choice for breakfast, mixed in with diabetic-friendly ingredients, one can not go wrong.


INGREDIENTS

3 pcs egg whites
1 tsp olive oil
1 cup spinach
60 g cottage cheese
1 tbsp grated parmesan cheese
Salt and ground pepper to taste


DIRECTIONS

In a medium bowl, whisk together egg whites and 1 tbsp of water. Season with salt and pepper and set the whites aside.

Heat the olive oil over medium-high heat in a nonstick skillet. Add spinach and season with salt and pepper. Cook until wilted and tender, about a minute.

Add the egg whites and cook until they are nearly set.

Once the eggs are cooked, about 2 minutes, add cottage cheese on top of the omelet, sprinkle with Parmesan, season with salt and pepper to taste.

Slide the omelet gently onto a serving plate.
Serve and enjoy!

Free-Range Chicken on Spicy Rice


INGREDIENTS

For the rice:
250 g rice preferably Organic Rice
1 tablespoon curry seasoning blend
2 chili (crushed)
Salt

For the coquelet:
200 g Free-Range Chicken Drumsticks
200 g Free-Range Chicken Thighs
100 g Free-Range Chicken Breasts
4 tablespoons vegetable oil
4 garlic cloves, minced
2 tablespoons soy sauce
2 tablespoons chives (minced)
Salt & pepper to taste


DIRECTIONS

Pour 1.5 liters of water in a casserole. Add curry powder and salt, then the rice. Let boil until rice is cooked.
Drain the rice in a strainer and then add the crushed chili.
Preheat the oven to about 210 °C (410 °F).

Mix the vegetable oil, minced garlic, soy sauce, salt, and pepper. Pour this sauce mixture in a large ovenproof casserole. Add the chicken cuts and coat it all over with the sauce. Bake in the oven for 30-40 minutes, continually brushing the sauce on the chicken from time to time. 5 minutes before the chicken is done, put the rice in the oven to reheat.

To serve: transfer the rice onto a large serving platter and place the cooked chicken on top. Coat with the rest of the sauce and chicken juices. Sprinkle with minced chives. Bon appétit!
