Shrimp & Avocado Verrines


Try this recipe made by a dear friend and loyal patron of GERALD.ph, Chef Christelle! Chef Christelle, originally from Switzerland is a photographer, martial artist and a passionate cook now based in Manila with her family.

Christelle is always looking for new, easy yet tasty ideas to feed her family. She loves having guests over for dinner and to try new things in culinary. She has taken the Culinary Art course from Ducasse Institute at Enderun in Manila and is excited to share great gourmet ideas to help you use GERALD.ph items, to create masterpieces right at home!

For the shrimp:

1 pack Cooked Shrimp (White Vannamei)
1/2 pack cream cheese
1 large tbsp minced chive or spring onion
1/2 tbsp roasted paprika
1 drop olive oil
a pinch of Gomasio (sesame seeds with salt)
Mixed peppercorn
1/2 lemon, juiced

In a large bowl, mix all ingredients together.
Add shrimp to the mixture then refrigerate.

For the avocado:

1 big ripe avocado (or 2 small avocado halves)
a pinch of Cayenne pepper
1 large tbsp chopped coriander (cilantro)
a few drops of lemon juice 
Salt and pepper

Cut avocado into dice and place in a large bowl.
Mix all the ingredients together.

Dressing the terrine: 

Place first the avocado mix in the terrine as base.
Top with the layer of shrimp mix.
Garnish with cilantro leaf and a slice of lemon.
Serve and enjoy!

Potato and Pepper Drops Salad with Dijon Vinaigrette Recipe

Here is a simple yet easy to prepare gourmet dish to try at home as an appetizer or a side dish.

INGREDIENTS

400 g red new potatoes
2-3 tbsp Sabarot red pepper drops
2 tbsp Clovis red wine vinegar
2 tbsp whole grain mustard
2 tbsp olive oil
2 tbsp chopped chives
2 tbsp chopped parsley
1 tbsp chopped dill
Salt and pepper

DIRECTIONS

Bring the red potatoes covered with water to a boil and cook until tender.
Drain and let sit to cool then cut them in half or quarters.
In a bowl, combine mustard and vinegar then slowly mix in the olive oil (add water according to preferred texture).
Toss the potatoes into the vinaigrette.
Gently mix to rub the mixture onto the potatoes.
Spread the red pepper drops.
Sprinkle with chives, dill, and parsley and combine gently.
Dust a little salt and pepper to taste.
Serve and enjoy!

Try this complete meal, loaded with nutrients and health-promoting ingredients. Get your immunity ready for when you finally step out of your door again.


INGREDIENTS

Spelt: 40g per person (1.4 oz)
White quinoa: 40g per person (1.4 oz)
Tri-color quinoa: 40g per person (1.4 oz)
Porcini mushrooms (cepes)
Chanterelles mushrooms
Pepper drops
Cream, spices

Spelt (risotto way cooking): 

Heat a little oil in a pan, put the spelt, stir. Add the vegetables broth and herbs (coriander) ladle by ladle when the spelt absorbs water for 40 minutes until it’s cooked.

Tri-color and white quinoa:
Put the quinoa in boiling and salted water, cook for 10 minutes.

Mushrooms:
Take a whole porcini mushroom and bake softly on all sides (or take some porcini mushrooms from the Premium range and simply reheat). Cook chanterelle mushrooms (idem).

In the bottom of a strainer, put half a tea ball, fill the strainer with quinoa and spelt, unmold.

Make a sauce by mixing spices and herbs in plant cream and drop into volcanoes. Add the chanterelles in cereal volcanoes. Use pepper drops as topping.

Serve and enjoy!
