Avocado Bacon Barbecue Burger


Ingredients

1 pack Certified Angus Beef ® beef burger
8 slices bacon
4 large leaves red or green leaf lettuce
1-2 tomatoes (to yield 6-8 slices)
1 avocado (2 halves)
1 1/2 teaspoons kosher salt
1 teaspoon fresh cracked black pepper
3-4 tablespoons barbecue sauce
4 burger buns

Directions

Prepare toppings: cook bacon, wash lettuce, slice tomato and avocado; Set aside.
Preheat 3/4 of the grill to medium high and season burgers with salt and pepper.
Place burgers over direct heat and grill 2-3 minutes on the first side, flip, baste with barbeque sauce and grill 2-3 more minutes.
Flip again, baste with sauce and move patties to the cool side of the grill to finish cooking (should reach an internal temperature of 160°F).
Build burgers with bottom bun, lettuce, tomato, burger, bacon, avocado and top bun.

Hearty Sausage Meal


Ingredients

2 pcs Cheese Hungarian Sausages
5-10 slices La Prudencia Chorizo Extra
2 eggs
5 bacon slices
1/4 cup mushrooms
2 slices of bread
Bonne Maman Chestnut Spread
2 tsp Echiré salted butter
a small can of beans in tomato sauce
3-5 pcs cherry tomatoes, sliced

Directions

Take out the sausages from the freezer.
Cook the eggs sunny-side up.
Stir-fry bacon and mushrooms.
Toast the slices of bread, spread with chestnut spread or butter.
Cook sausages over medium heat in a hot pan for 3-5 minutes, turning them every 30 seconds.
Cut the chorizo into thin slices.
In a big serving plate, place the eggs, bacon, mushrooms, tomatoes, and the toasts.
Serve with beans in a small bowl.
Pair with coffee or kombucha.

Rack of Veal in Mushroom Sauce

 

Veal meat is best slow-cooked, preferably roasted without overcooking to bring out the best of its melt-in-the-mouth soft and velvety texture and rich flavor. Here is a recipe that will surely make any occasion more special.

INGREDIENTS

Rack of veal


2 veal racks (Frenched)
1 tsp dried rosemary
½ tsp parsley
1 tsp marjoram
2 tbsp extra virgin olive oil with hot pepper
2 cloves garlic, crushed
salt and pepper

Mushroom sauce


128 g porcini mushrooms
128 g chanterelles
3 tbsp Echire butter
1 tbsp all-purpose flour
2 yellow onions, finely chopped
2 tbsp pure bee honey
1 cup Grillo dry white wine
1 ¼ cup veal stock
½ cup whipping cream

DIRECTIONS

Rack of veal


Preheat the oven to 200°C (400°F) with the roasting rack placed in the middle of the oven.
Tie up the rack of veal, rubbing the herbs over the meat then season with salt and pepper.
In a large skillet, heat olive oil then sauté the crushed garlic.
Brown the veal rack over medium-high heat.
Transfer the veal rack in the roasting pan and roast in the oven for 50 minutes more or less (thermometer at 55°C when inserted at the center of the meat).
Once cooked, place on a serving platter and let rest for 10 minutes.

Mushroom sauce


Put butter in a pan and add the yellow onions.
Sprinkle it with salt and pepper.
Add flour and continue cooking for about a minute while stirring.
Then the wine and bring to a boil, continue to stir with a whisk.
Add the veal stock, mushrooms, honey, and water (when needed).
Bring back to a boil and reduce liquid, continue to cook until the sauce is slightly syrupy.
Add whip cream and continue to heat, reducing the liquid if needed.
Season according to taste.
Top the sauce on the veal rack.
Serve with roasted baby carrots and cauliflower purée.

Cocoloco Vegan Crepes


Check out this crepe recipe filled with heavenly ice cream, vegan-style. Easy to make and perfect for breakfast or brunch! You don't even have to be vegan to enjoy it.

Ingredients

1/2 pint Cocoloco vegan ice cream
3 cups gluten-free flour
2 tbsp cornstarch
2 tbsp sugar
a pinch of salt
4 tbsp virgin coconut oil
2 cups Silk Soymilk unsweetened
2 cups water
Frozen berries of choice
4 tsp vegan Better Butter

Directions

Whisk together the ingredients for the batter in a large bowl - flour, cornstarch, sugar, and salt.
Add the oil, soymilk, and water then combine until smooth.
On a frying pan, melt a teaspoon of butter per piece of crepe.
Pour ⅓ cup of batter onto the pan and spread evenly.
Heat over medium heat for 2 minutes, turn regularly.
Cook the rest of the batter the same way.
Let rest for a minute to cool.
Fill each crepe with Cocoloco ice cream and berries of choice.
Fold and top with another scoop (can also be cocokape or tsokococo flavor).
Serve immediately.
