Salmon Burger

Salmon Burger

 

Salmon is one of the most versatile fish to include in any recipe. Cook it in casseroles, or add it to pastas, even salads. How about a salmon burger? Fun for the kids to eat and easy for you to make. Let’s get started.


INGREDIENTS

1 pc of GERALD.ph Salmon Fillet Portions, baked and flaked
1 egg, beaten lightly
1/2 cup bread crumbs
1 garlic clove, minced
Lemon juice and zest (1 lemon)
1 tsp. Worcestershire sauce
Red pepper flakes, a pinch
2 tbsp. Dill, minced
1 tbsp. Dijon mustard
Salt & Pepper, to taste
1 tbsp. olive oil
Burger buns
Romaine Lettuce
Tomato, Red onion, sliced

DIRECTIONS

Season Salmon with salt and pepper, put in a baking sheet and bake in 450°F preheated oven for 8 to 12 minutes, or until flaky. Cool, and flake the flesh with a fork.

To make the patty, combine the salmon with egg, bread crumbs,lemon zest and juice, dill, mustard, Worcestershire sauce, red pepper flakes, and garlic. Season with salt and pepper. Mix to fully combine, and form into three to four patties.

Heat oil in a skillet, add the patties and cook until golden, about 3 minutes per side. Serve patties on buns with romaine and onions.

Free-Range Chicken on Spicy Rice

 

I feel more confident serving my family free-range chicken because I know I am giving them chicken that has more nutrients compared to the regular kind. Go ahead and enjoy this flavorful dish that has a bit of a kick. Excellent for improving your family's appetite for lunch!

INGREDIENTS

For the rice

250 g rice preferably Organic Rice
1 tablespoon curry powder
2 chili (crushed)
Salt

For the coquelet

500 g Free-Range Chicken Drumsticks
4 tablespoons vegetable oil
4 garlic cloves, minced
2 tablespoons soy sauce
2 tablespoons chives (minced)
Salt & pepper to taste

DIRECTIONS

Pour 1.5 liters of water in a casserole. Add curry powder and salt, then the rice. Let boil until rice is cooked.
Drain the rice in a strainer and then add the crushed chili.
Preheat the oven to about 210 °C (410 °F).Mix the vegetable oil, minced garlic, soy sauce, salt, and pepper. Pour this sauce mixture in a large ovenproof casserole. Add the chickens and coat it all over with the sauce. Bake in the oven for 30-40 minutes, continually brushing the sauce on the chicken from time to time. 5 minutes before the chicken is done, put the rice in the oven to reheat.To serve: transfer the rice onto a large serving platter and place the cooked chickens on top. Coat with the rest of the sauce and chicken juices. Sprinkle with minced chives.

Balsamic-Glazed Salmon Portions

INGREDIENTS

2 pcs salmon fillet portions 
2 Tbsp balsamic vinegar 
1 Tbsp olive oil 
1 Tsp honey 
1 Tbsp dijon mustard 
1 Tbsp rice vinegar (optional)
1 Tbsp lemon juice
pepper

DIRECTIONS

Mix all liquid ingredients plus pepper in a small bowl. Pour this mixture over salmon and allow to marinate for 20 minutes. Place piece of tin foil on a baking sheet and spray with cooking spray. Place the salmon on the baking sheet and bake in an oven preheated to 400 degrees F for 8 to 12 minutes.
