Easy Ricotta & Pumpkin Rolls

 

This is an excellent recipe to prepare for Halloween. Make it easily with premade puff pastries. The sweetness of the pumpkin combined with the nutty flavor of the seeds, and spices together make light addicting savory flavors. A nice variation from the usual lumpia, add this bite-size treats as convenient sides to your main dishes.


INGREDIENTS

2 sheets PAMPAS Puff Pastry, thawed
250g ricotta cheese
250g pumpkin (or local kalabasa) peeled and chopped
2 tsp olive oil
½ red onion finely chopped
2 cloves garlic, finely chopped
½ tsp ground cumin
40g feta, crumbled
2 tbsp pumpkin seeds (or buto ng kalabasa), peeled and toasted
¼ cup coriander leaves, chopped
1 egg lightly whisked
Sunflower seeds, for sprinkling
Sweet chilli sauce, for serving

DIRECTIONS

Preheat oven to 220°C. Line an oven tray with baking paper.

Boil pumpkin or kalabasa in a saucepan of water until tender. Drain, and mash until smooth and set aside to cool.

Heat oil in a frying pan over medium heat. Add onion, garlic and cumin. Cooking for several minutes until onion is tender. Set aside to cool.

In a large bowl, combine the cooled pumpkin and onion mixtures with the ricotta, feta and pumpkin seeds. Mix well and season to taste.

Cut each pastry sheet into 4 even squares. Divide ricotta mixture along the centre of each pastry square. Brush one edge lightly with egg wash and fold over to encase filling with seam underneath.

Place onto lined oven trays and brush with more egg wash and sprinkle with seeds. Bake for 22-25 minutes or until pastry is golden and crisp. Serve warm with sweet chilli sauce.

Cauliflower Fried Rice


Cauliflowers are great replacement for rice, if you are on a low-calorie diet, or simply wanting to add more whole foods to your meals. It is a staple recipe for those who are on a ketogenic diet. This recipe is a dish on its own, but also great to pair with meat and seafood mains. Without meat, it is also an excellent addition to a vegan, vegetarian, even a paleo diet. Let’s get started!

 

INGREDIENTS

2 frozen bags of Cauliflower
6 to 10 florets of frozen Broccoli
3/4 cup frozen or canned peas
1 medium-sized carrot, thinly sliced
1 tsp garlic, minced
1 bunch of spring onions, chopped
2 chicken breasts
salt & pepper to taste
2 tbsp. sesame oil
2 to 3 tbsp soy sauce

DIRECTIONS

Put frozen Cauliflower in food processor, and use pulses to slowly chop it to small rice-size pieces.

Prepare chicken breast by seasoning with salt and pepper, and frying in a pan for about 5 to 10 minutes on each side. Shred the meat into small bite-size pieces (leave out for vegan version).

In the same pan, add the oil, cauliflower, and minced garlic. Sauté together for 10 to 15 minutes. Break 1 egg (leave out for vegan version) into the pan, and scramble it in. Add the spring onions, peas, carrots, broccoli, and chicken, making sure to stir frequently.

Add soy sauce and cook for about 5 more minutes or until the veggies have reached your desired crunch. You can drizzle on 1 to 2 tablespoons of soy sauce and sesame oil to add flavor to your liking. Add pepper or Sriracha if you are in the mood for a little spice. Serve on a plate and dig in!

Smoked Salmon Pâté with Dill and Lemon


Ingredients:

150g or half a pack of GERALD.ph Smoked Salmon
1 tbsp crème fraîche (optional)
200g cream cheese
Juice from half a lemon
small bunch dill or chives, chopped
Toast or breadsticks to serve

Directions

Chop smoked salmon into small pieces.

Mix cream cheese, crème fraîche (if you have it), and lemon juice into a blender or a food processor with generously sprinkling of black pepper until well blended. Do not over blend at this point, as you would still be adding the salmon.

Add the smoked salmon and pulse a few times if you want the paté chunky or mix some more if you want the paté smooth and pink.

Fold the herbs into the paté and spoon into a nice ramekin or bowl and serve. Serve with toast for a perfect starter, or as a dip with breadsticks.

Fusilli Pasta with Creamy Tomato Sauce


INGREDIENTS

1 pound dried Fusilli Pasta ( Whole Wheat or Gluten-free)
1 can of Amy’s Tomato Bisque Soup
4 tbsp salted butter
3 tbsp all-purpose flour
2 cups whole milk
1 cup shredded cheddar
½ pound cremini or button mushrooms, cleaned and sliced
3 medium shallots, thinly sliced
A few stems of fresh thyme, washed and dried
Olive oil
Salt and pepper

DIRECTIONS

Cook pasta according to directions. Melt butter in a saucepan in low heat, and whisk in flour for 1 to 2 minutes. Slowly whisk in the milk in small increments. Turn up the heat to medium and simmer, whisking frequently. Add the soup, and continue to simmer. Add cheddar, and salt and pepper to taste, and immediately set aside.

In another pan, sauté the shallots, and set aside. Add some more oil to the pan, and sauté the mushrooms until lightly browned, and add a pinch of salt.

When the pasta is al dente, drain the pasta water from the pot, reserving a cup of water. Return the pasta in the pot with the cup of water, then add the tomato sauce, shallots and mushrooms. Stir and let the water evaporate a bit, until pasta is creamy but no longer runny. Sprinkle additional salt and pepper to taste, if desired. Serve garnished with fresh thyme and enjoy!

To make this gluten-free, substitute gluten-free pasta and gluten-free flour of your choice to the ingredients.
