Prime Rib Garlic & Herbs Steak

 

 

Christmas and New Year feasts are right around the corner. To add a special touch to your family dinners, why not try and create this easy but magnificent steak recipe using USDA choice beef? A delicious and perfect quality steak. Let's get started!


INGREDIENTS

1 pack USDA Choice Beef Prime Rib
1 Boursin (Garlic & Herbs)

salt and ground black pepper

 

DIRECTIONS

Make sure the meat is thawed and at room temperature.

Rub with boursin garlic and herb butter into the meat and coat well.

Season with salt and pepper.

On a cast iron pan, cook the steak 2 to 3 minutes each side, for rare, 4 minutes each side for medium, and 4-6 minutes per side for well done.

Let rest for a few minutes so that meat can relax and juice can spread back to the entire meat.

Serve and enjoy!

Adlai Stewed in Coconut and Curry


Adlai is an excellent low-glycemic alternative to rice. It has a nice texture that is slightly chewy yet firm and al-dente to the bite--like rice shaped pasta grains. A great ingredient to salads, any soup favorites or stew recipes! Here’s a tasty one for you to try for your family this week.

INGREDIENTS

1 coconut milk from 1 medium sized coconut grated and expeller-pressed)
2 small garlic cloves, chopped
1 medium onion, chopped
3 medium shallots, chopped
1/2 chile (siling labuyo), de-stemmed, sliced and seeded
2 1/2 teaspoons fine salt
1 tsp curry powder
5 cups water
3 cups or 15 oz cooked Adlai grains

DIRECTIONS

Saute onion in coconut oil until translucent and soft. Add garlic, shallots and chile and saute for another 5 minutes. Add curry powder, and the coconut milk. For the coconut milk, you can get it canned, but fresh is always the best.

You can get the freshest coconut milk by getting meat grated and expeller-pressed at your local wet market or grocery stores. If your local market does not do this, buy the meat grated instead, and at home, add 1 cup of warm water, and manually squeeze out the fiber to extract the milk.

Taste the broth and adjust to your liking. Add adlai grains and simmer on low heat until tender, around 30 to 40 minutes. I find soaking the Adlai rice grains at least a half hour pre-cooking cuts cooking time in half. When cooked, you should have white soupy adlai rice that is nice and tender. This is a fantastic main dish, or can also be served as a side for fish or meat dishes. Serve on a nice bowl and top with sliced chiles or toasted coconut.

Easy Ricotta & Pumpkin Rolls

Easy Ricotta & Pumpkin Rolls

 

This is an excellent recipe to prepare for Halloween. Make it easily with premade puff pastries. The sweetness of the pumpkin combined with the nutty flavor of the seeds, and spices together make light addicting savory flavors. A nice variation from the usual lumpia, add this bite-size treats as convenient sides to your main dishes.


INGREDIENTS

2 sheets PAMPAS Puff Pastry, thawed
250g ricotta cheese
250g pumpkin (or local kalabasa) peeled and chopped
2 tsp olive oil
½ red onion finely chopped
2 cloves garlic, finely chopped
½ tsp ground cumin
40g feta, crumbled
2 tbsp pumpkin seeds (or buto ng kalabasa), peeled and toasted
¼ cup coriander leaves, chopped
1 egg lightly whisked
Sunflower seeds, for sprinkling
Sweet chilli sauce, for serving

DIRECTIONS

Preheat oven to 220°C. Line an oven tray with baking paper.

Boil pumpkin or kalabasa in a saucepan of water until tender. Drain, and mash until smooth and set aside to cool.

Heat oil in a frying pan over medium heat. Add onion, garlic and cumin. Cooking for several minutes until onion is tender. Set aside to cool.

In a large bowl, combine the cooled pumpkin and onion mixtures with the ricotta, feta and pumpkin seeds. Mix well and season to taste.

Cut each pastry sheet into 4 even squares. Divide ricotta mixture along the centre of each pastry square. Brush one edge lightly with egg wash and fold over to encase filling with seam underneath.

Place onto lined oven trays and brush with more egg wash and sprinkle with seeds. Bake for 22-25 minutes or until pastry is golden and crisp. Serve warm with sweet chilli sauce.
