Mango Tatin Tartlets

Is there anything better than Philippine Mangoes? Admittedly, in my travels, I have not tasted anything that can compare to the mangoes we have here in our own country. This recipe is another way to enjoy mangoes in a delectable dessert you can make right at home with prepared puff pastry dough that makes baking so much easier!

Ingredients:

250 grams puff pastry
4 ripe mangoes (or Frozen Mangoes 20% Off for a limited time!)
Lemon zest
50 grams butter
50 grams sugar
100 ml vanilla ice cream

Directions:

Prepare the mangoes. It is best to choose mangoes that are sweet but are not yet over ripe so they hold their shape better in the baking process. Slice off the fleshy part of the mango on both sides of the core. To make slices easily, hold mango halves with skin on and score vertically from top to bottom with a knife (being careful not to slice through the skin), and scoop them out with a spoon.

Melt butter in pan, add sugar and the mango slices. Let caramelize for around 5 minutes on low heat.

Put the mangoes carefully inside each tartlet mold, and cover with the puff pastry. Use a spoon to tuck in the edges of the puff pastry inside the mold, being careful not to touch the caramel.

Cook in the oven for about 10 minutes in preheated oven at 210°C ( 410 °F). Reduce the heat to 170°C (330°F) for 25 to 20 more mins. Check regularly.

Take out of the oven and let cool for 1 to 2 mns. Flip the tarts on plates. And decorate with lemon zest and a spoon of vanilla ice cream.

Homemade Fruit Popsicles

Ingredients and Materials:

3 Cups Pureed Fresh Fruit or Ready Made Fruit Puree
Popsicle Molds
Popsicle Sticks
1/2 Cup Yogurt (optional)

Steps:

Choose from a variety availabe at our Fruit Puree’s section, or create your own fruit puree by blending fresh fruit. I find naturally sweet and colorful fruits are the best: strawberries, mangoes, cherries and bananas.

Position the sticks in the mold. If using a makeshift mold such as plastic cups or silicone trays, cover the container with aluminum foil or cling wrap and poke through the center with the popsicle stick to help keep it in place.

Pour fruit puree into the molds. To make fun patterns, add 2 tablespoons of yogurt in between the same amount of fruit puree. Dip a spoon in and lightly swirl it around to make swirly patterns.

Place in freezer for at least 5 hours. When ready, take molds out and run the outside under warm water for 10 to 15 seconds and pop the popsicles out. Enjoy! This recipe makes around 10 popsicles, depending on the size of your molds.

Edamame Mixed Mushroom Carbonara

For a delicious creamy pasta recipe that has less carbs but high protein and fiber, try this quick and easy recipe. Notice that this would no longer need additional meat like the typical Carbonara with bacon or chicken, since you can already enjoy nice protein from the pasta that you use.

It saves you cooking time and would also be very well within your weekly meal budget planning. Try this for your family this week. Enjoy!

Recipe adapted from 7 grains.
Ingredients:
1 pack 200 grams Edamame Beans Pasta

Add mixed forest mushrooms and sauté for another 5 minutes. Stir in soup, milk and thyme. Bring to simmer. Reduce heat and simmer for 4-5 minutes to bring the flavors together.
