Summer Fillo Cups


A must-try simple fillo cups recipe. Fill with your favorite savory filling and enjoy a rather refreshing summer!

makes 8

Ingredients

6 sheets fillo pastry
50 g melted butter

Savoury Filling Suggestions
Prawn cocktail - baby cos lettuce leaves, fresh prawns and marie rose sauce
Greek - crumbled feta, heirloom cherry tomatoes, olive oil and parsley
Chicken Salad - leftover roast chicken, walnuts, celery and mayonnaise

Directions

Preheat your oven to 190 °C and brush the melted butter liberally over the muffin tin.
Lay out the fillo on a clean bench widthways-the longer end facing you. Cut in half and then proceed to cut each half into 4 even quarters.
Lay a sheet into the muffin pan, pressing lightly so it fits and brush with butter. Layer another sheet of fillo on top and repeat this process for each muffin hole (each muffin hole will take 6 sheets total).
Cook in the oven for 10-12 mins until golden and crispy.
Fill each fillo cup with your desired filling.
Serve and enjoy!

Lamb Leg Roast


Roasting can sound intimidating. But to share a little secret: all you really need is a good herb rub and your trusty oven. With quality meat on hand, it only takes very little effort to serve up a feast at home in time for Father’s Day.

Ingredients:

1 pack lamb leg bone-in
4 cloves garlic, minced
1 tbsp oregano
1 tbsp fresh rosemary, chopped
1 tbsp olive oil
1 tbsp Mustard de Dijon
Salt and ground black pepper

Directions:

Preheat oven to 350 °F.
Cover baking pan with aluminum foil.
Combine herbs and spices, minced garlic, and mustard in a bowl.
Pat dry the lamb leg using paper towels.
Rub garlic mixture thoroughly all over the lamb.
Place lamb in the baking pan and roast in the oven until the desired doneness (1.5 to 1.75 hours).
Make sure to check the internal temperature at 145 °F .
Let sit 15 minutes before cutting.
Serve immediately with baked potatoes.

Classic Grilled Lobster


Simple yet a luscious recipe, excellent for fine dining for two or serving a seafood platter at home. Pair with Smoked Salmon Carpaccio with Radish recipe.

Ingredients

2 whole frozen lobsters, thawed
1/2 cup Isigny French butter
2 tbsp parsley, minced
8 cloves of garlic, minced
Salt and ground black pepper
Some chili flakes (optional)

Directions

Cut the lobster in half, lengthwise in equal portions.
Loosen meat from the shell then lay carefully over the shell.
In a bowl, combine butter, minced garlic, and parsley.
Season with salt and pepper.
Rub mixture over the lobster meat.
Cover then refrigerate for 20 minutes.
Preheat the grill.
Place lobster on the grill meat side up.
Grill over medium heat until meat is opaque.
Top with chili flakes.
Serve and enjoy!


Ingredients

80 g smoked salmon
juice of 1 lime
170 g radish
6 mixed peppercorns, crushed
1 tbsp dill
Black pepper

Directions

Wash, peel and finely grate the radish, then spread it out to make a rosette on a small plate.
Cut the salmon slices into small, even (round) pieces and arrange them in the center of the radish rosette.
Drizzle with lime juice, sprinkle with crushed peppercorns and top with dill.
Keep chilled until ready to serve.
Serve and enjoy!
