Yu Sheng Recipe for Chinese New Year!

 This salad dish is quick, healthy and such a colorful way to celebrate the occasion! Common in Singapore and Malaysia, a lot of people make use of smoked salmon as the center of the dish, and modern versions add more elements in. Gather your guests around the table. After assembling each item on your plate toss the salad up high 7 times, with auspicious wishes for the new year!

Ingredients

150 -200 gr smoked salmon
1 medium peeled yam (taro)
1 small jicama
1 carrot
1 mango
1 cucumber
Japanese pickled ginger
10 thin wonton wrappers cut into 1/2-inch strips
Cooking oil for deep frying
Red food coloring
Green food coloring

Plum sauce dressing:
4 Tbsp plum sauce
1 Tbsp sesame oil
1 tsp Water or as needed to thin out the sauce

Directions

Prepare plum sauce dressing by adding the plum sauce and sesame oil, and water in a bowl. Add water to achieve desired consistency. Refrigerate.

Fry the wonton strips in cooking oil until crispy and golden brown.

Slice the veggies into strips. You can choose to color the yams with food coloring by adding a few drops of coloring, tossing until fully colored and drying in a baking sheet. Fry the yams until crispy.

Take a big round platter and place the ingredients on the plate. Have the smoked salmon folded into a rose at the center, and arrange the other ingredients in layers in an outward direction.

Gather your guests around the table. Using chopsticks, place each element of the salad onto your plate and say an auspicious greeting. Add the dressing and toss the elements 7 times as high as you can to mix, while yelling each wish for the new year as loud as you can. The higher you toss and the louder you say your wishes, the greater the fortunes will be!
