Poached Egg Toast
2 slices Whole Wheat Bread
1 Whole Leaf Spinach
5 cloves garlic, crushed
1 tbsp unsalted butter
Salt and ground black pepper
Rub exterior of the whole wheat bread with some of crushed garlic cloves then toast in an oven toaster. Put on a plate once done.
Poach eggs in a pan. Sprinkle salt and pepper over the egg to taste.
In another pan, sauté butter and the other batch of crushed garlic cloves over medium heat until garlic turns brown. Add spinach then sprinkle with salt and pepper to taste. Stir occasionally and cook for about 10 minutes.
On a plate of toasted whole wheat bread, spread the cooked spinach on the two slices. Top with the poached eggs. Sprinkle with salt and pepper according to taste.
