Serving a fish during a Chinese New Year dinner symbolizes abundance for the coming year. Classic, simple yet festive dish to serve for prosperity in the new year!
Ingredients
1 kg salmon or 2 pcs barramundi or pompano, cleaned and scaled
2 red bell peppers, thinly sliced
½ pack frozen baby carrots, thinly sliced
2 tbsp ginger, shredded
2 red chilis, finely chopped
6 spring onions, sliced
6 tbsp organic premium soy sauce
6 tbsp oyster sauce
4 tbsp sugar
6 tbsp vinegar
2 tbsp sesame oil
2 tbsp cornflour
Salt
Olive oil
Directions
Cut diagonal slits on the sides of the fish.
Season with salt.
Steam until cooked (or grill on both sides).
Heat oil in a pan, add shredded ginger, chilis, and veggies.
Toss over high heat for a few minutes.
Add soy sauce then the oyster sauce, and vinegar.
Mix in the sugar and sesame oil, then bring to a boil.
In a bowl, mix cornflour with water into a smooth paste.
Add the paste to the cooking mixture and simmer until the sauce becomes thick.
Place fish on a plate and top with the sweet and sour sauce.
