Thawing

Store in the refrigerator overnight or place in a dish under running water.

Cooking

Pan: Salt the liver (add in pepper or herbs if preferred) and cook on a hot pan over high heat for 1-2 minutes until golden brown. Flip and brown the opposite side. Let rest for 2-4 minutes before serving.

Serving

Serve in small portion sizes.
Slice the foie gras into rounds or medallions around 1/2 to 3/4 inch thick.
