Australian Wagyu Beef comes from the highly marbled, ultra-rich breed that made Japan famous. A savory steak with a smooth velvety texture and a taste that spreads throughout the mouth. It is a full tomahawk steak along the exposed bone, juicy, tender with buttery soft flavor. A gourmet treat for a great dining experience.
 
With the equivalent Japanese BMS scale of 5 (Australian Wagyu MS5 is the same as a Japanese Wagyu BMS5).

Australia is one of the biggest producers of  Wagyu Beef in the world. It uses its own grading scale, the AUS-MEAT marbling system. This scale goes from 0 (no marbling) to 9+ (extraordinary amounts of marbling), the latter one being the highest grade. The Australian Wagyu grading scores are identical to the Japanese BMS scale, meaning an Australian Wagyu BMS 5 is the same as a Japanese Wagyu BMS 5. However, the Australian scale tops out at grade 9, and everything above it (scores 10, 11, and 12), are graded 9+. 

Health Benefits:

Wagyu beef is rich in monounsaturated fat, around 300% more than normal beef thanks to its marbling. It is also a good source of omega 3 and 6 fatty acids (comparable to olive oil or salmon).

Among the meats, wagyu beef also has the lowest cholesterol levels and it provides oleic acid, considered to be heart-healthy. Studies shown that it also has anti-carcinogenic properties.

How to Cook Wagyu Beef:

- heat pan before adding the steak
- sear 2 minutes each side
- reduce heat to the pan to medium-low
*All marbling seams of the Wagyu steak should be heated through to obtain optimal flavor
*To ensure safety of food, recommended steak cooking temperature is at 145° F (medium heat) and 3-minute rest after.
- ideal for grilling and sautéing also

Thawing: defrost the beef in the refrigerator for up to 48 hours.

Storage: upon opening, store tightly wrapped in the coldest part of the freezer.

Shelf Life: 1 year in the freezer
