Shrimp Rice Paper Rolls

5-6 lettuce leaves
3-4 leaves parsley
Real Thai Spring Roll Sauce or Rice Paper Sauce
4-6 pcs Real Thai Rice Paper
6-10 basil leaves (optional)
5-6 peppermint leaves (optional)
Slice carrot, tomato, and cucumber in strips.
Shred the lettuce and parsley leaves.
Boil the shrimp and drain.
Put a sheet of rice paper in water and remove after only a few seconds, leave it on a towel for one minute to soften.
Place the rice paper on a plate and put some lettuce in the center.
Arrange carrot, cucumber, tomato, parsley, and shrimp on top of the lettuce.
Fold in both sides of the rice paper.
Then fold up one-third of the filling.
Continue to roll the paper to enclose the entire filling.
Serve with spring roll sauce or rice paper sauce.
As desired, add the fresh mint leaves and sweet basil leaves or other vegetables.
