Ingredients
2 pcs USDA Choice Striploin
Olive oil
Echire Salted Butter
Boursin garlic & fine herbs
Salt and pepper to taste
Choice of vegetables
Directions
Put striploin in a dish covered with cling film and let thaw for 6 hours.
Pat dry with paper towels.
Preheat the oven to 450°F (230°C).
Sprinkle both sides with coarse salt and pepper.
Let rest for half an hour at room temperature before cooking.
Pour olive oil into a cast iron skillet and heat over medium high heat until the surface of the oil begins to shimmer.
Cook steaks in the hot skillet for 2 minutes, flip them over, then let them cook for another 2 minutes on the other side.
Place the pan in the pre-heated oven and cook for 4 to 5 minutes for a medium rare steak with a pink center.
Place on a plate with half a knob of salted butter and half of garlic herb butter to garnish, allowing them to melt before serving.
Serve with grilled veggies like asparagus, brussels sprouts, chili, and tomato.
