Pierre-Jean Sauvion, Maison Sauvion’s current oenologist, carried out his first grape harvests in Cahors, Saint-Émilion and Château Haut-Sarpe. With his oenologist’s diploma in his pocket, he travelled abroad to widen his knowledge: the Chappelet vineyard in California and the Howard Park estate in Australia. With this double experience behind him, he now tends the Sauvion vines with loving care and attention! Pierre-Jean pays particular attention to supervising fermentation and maceration for the production of easy-drinking wines. He owes his wine-making secrets to his teachers, secrets handed down by his uncle and father. (nickollsandperks.co.uk)
