How to Cook:
Rice Cooker: Add 1 cup of rice + add 2-2.5 cups of water or adjust as per your preference
Microwave: Place 1 cup of rice into a deep microwavable bowl +add 2-2.5 cups of boiling water+ cover and cook as recommended

Wholegrain Thai Rice & Quinoa salad

1 cup (100g) Rice Plus Quinoa and wholegrain rice blend
1 1/2 tablespoons lime juice
1/2 tablespoon fish sauce
1 tablespoon sugar
1 garlic clove, crushed
1 carrot, cut into thin batons
1/2 cup coarsely chopped cashews, toasted
1/2 cup coriander leaves
1/2 cup coarsely chopped mint
1 green onion, thinly sliced
Cook the Ryce+ Quinoa and wholegrain rice blend following packet directions. Set aside to cool completely.
Meanwhile, combine the lime juice, fish sauce, sugar, and garlic in a jug. Stir until the sugar dissolves.
Place the cooled rice, carrot, cashew, coriander, mint, onion, and dressing in a large bowl. Toss to combine.
Serve and enjoy!
