Check out this crepe recipe filled with heavenly ice cream, vegan-style. Easy to make and perfect for breakfast or brunch! You don't even have to be vegan to enjoy it.
Ingredients
1/2 pint Cocoloco vegan ice cream
3 cups gluten-free flour
2 tbsp cornstarch
2 tbsp sugar
a pinch of salt
4 tbsp virgin coconut oil
2 cups Silk Soymilk unsweetened
2 cups water
Frozen berries of choice
4 tsp vegan Better Butter
Directions
Whisk together the ingredients for the batter in a large bowl - flour, cornstarch, sugar, and salt.
Add the oil, soymilk, and water then combine until smooth.
On a frying pan, melt a teaspoon of butter per piece of crepe.
Pour ⅓ cup of batter onto the pan and spread evenly.
Heat over medium heat for 2 minutes, turn regularly.
Cook the rest of the batter the same way.
Let rest for a minute to cool.
Fill each crepe with Cocoloco ice cream and berries of choice.
Fold and top with another scoop (can also be cocokape or tsokococo flavor).
Serve immediately.
