Potato and Pepper Drops Salad with Dijon Vinaigrette Recipe

Here is a simple yet easy to prepare gourmet dish to try at home as an appetizer or a side dish.

INGREDIENTS

400 g red new potatoes
2-3 tbsp Sabarot red pepper drops
2 tbsp Clovis red wine vinegar
2 tbsp whole grain mustard
2 tbsp olive oil
2 tbsp chopped chives
2 tbsp chopped parsley
1 tbsp chopped dill
Salt and pepper

DIRECTIONS

Bring the red potatoes covered with water to a boil and cook until tender.
Drain and let sit to cool then cut them in half or quarters.
In a bowl, combine mustard and vinegar then slowly mix in the olive oil (add water according to preferred texture).
Toss the potatoes into the vinaigrette.
Gently mix to rub the mixture onto the potatoes.
Spread the red pepper drops.
Sprinkle with chives, dill, and parsley and combine gently.
Dust a little salt and pepper to taste.
Serve and enjoy!
