French Ceps (Porcini Mushrooms)

These wild mushrooms, also known as Boletus edulis or the "king of mushrooms," are distinguished by their swollen base and a tube-like structure lining the inner side of the cap. In French, they are referred to as "ceps," and in Italian, they are called "porcini." These mushrooms are celebrated for their exceptional flavor, fragrant aroma, and meaty texture. They are carefully foraged, sorted, and then frozen to preserve their essence, making them ideal for enhancing a variety of refined dishes such as rich pasta sauces, risottos, stews, soups, and meat accompaniments.

As the king bolete, they are only available in the wild during specific seasons. Their rarity and the meticulous process required to harvest and prepare them add to their exclusivity. However, with our frozen option, you can enjoy these gourmet fungi and savor their rich, earthy flavor year-round.

The mushrooms should be blanched before cooking in order to avoid any bitterness: immerse the mushrooms in a saucepan of slightly salted boiling water (a pinch of salt). Cook for 30 seconds after resuming simmering. Drain. Then pour the mushrooms in a hot pan with a little butter. Cook over medium heat for 4:30 minutes, stirring occasionally. Add a teaspoon of garlic and a teaspoon of chopped parsley. Continue cooking for 2 minutes over medium heat.
