Parmesan Potato Croquettes
2 cups mashed potatoes
1 cup breadcrumbs
150 g Grana Padano, grated
2 large eggs
salt & pepper
Mix the mashed potatoes with the egg yolk, the grated Grana Padano, and parsley.
Season with salt and pepper and stir until smooth then shape into croquettes.
Beat one egg in a bowl.
Place breadcrumbs in another bowl.
Dip into the bowl of beaten egg then into the bowl of breadcrumbs.
Place parchment paper on a baking sheet then arrange the croquettes.
Bake at 200 °C until golden brown in color.
Serve hot and enjoy!

Storage: Best stored in the refrigerator at around 4° C (39° F). Wrap in cotton or hemp cloth or in an aluminum foil. Make sure not to combine with other strong-flavored cheeses in the fridge.
