This is caviar from sturgeon fish "Acipenser Gueldenstaedti", the Russian sturgeon, also known as the diamond sturgeon or Danube sturgeon. This true caviar is made of harvested eggs from the female sturgeon, then salt-cured. The grains are of good size, regular, and amber-coloured.

How to Serve:
As a rare delicacy, caviar is preferably enjoyed with a pearl or wooden spoon. Stick the tin on a bed of ice and spoon out a portion.
Enjoy caviar just neat, in small amounts, letting the grains explode against your palate, ideal to fully appreciate its delicately-scented flavour that will then set free.
Pile on warm toasted bread or a blini. On a plain bread, accompany with finely-chopped green onions, sour cream, and melted butter.
Useful recommendation: allow 30 to 50g per person - 15g for an appetizer (en-K de caviar).
Though they are small and a a delicacy, this gourmet treat is also good for the body. A serving is packed of protein, calcium, iron, vitamins A and D with abundance in vitamin B12 and selenium particulary. It is also a good source of other vitamins and minerals such as B vitamins, vitamin E, magnesium to name a few. It also contains a variety of essential amino acids.
It also has large amounts of omega-3 fatty acid that is good for the heart along with large amounts of eicosapentaenoic acid. (EPA) and docosahexaenoic acid (DHA), which support the nervous system, immune system and circulatory system. Adding caviar to the diet may help reduce risk of heart disease and may also help alleviate symptoms of depression and bipolar disorder
The only downside is that, it is also high in sodium and cholesterol. Moderation, especially for individuals in a strict diet, is recommended.
Storage: Store in refrigerator. After opening, must be consumed within 48 hours.
Shelf Life: 3 months refrigerated at temperatures 0° to +4°C
Hard-boiled Eggs & Caviar
1 hard boiled egg, cut in half lengthwise
1 tbsp creme fraiche
1 tbsp green onions, chopped
1 tbsp osetra caviar
Take out the yolks from hard boiled egg.
Put in place the creme fraiche.
Sprinkle with chopped green onions.
Garnish with caviar.
Serve and enjoy!
