Scrambled Tofu in Salsa
1/4 cup Organic Mild Salsa
1 cup light red kidney beans, cooked
1 cup tofu, drained and mashed
1/2 tomato, chopped
1/2 avocado, chopped
1/2 onion, chopped finely
1/2 green bell pepper, finely chopped
1/2 red bell pepper , finely chopped
2 tbsp parsley aromatic herbs
1/4 tsp basil
1/4 tsp ground cumin
1 tsp olive oil
a dash of ground saffron
In a non-stick pan, heat oil over medium-high heat.
Sauté onion and bell peppers and cook until onion is translucent.
Add spices parsley, basil, cumin, saffron, and salt, then the beans and tofu.
Cook with frequent stirring until heated through.
Serve on a plate.
Top with salsa evenly and garnish with parsley, avocado, and tomato.
