Quinoa Color : Quinoa is available in different colors. Although they are the same grain, there are slight nutritional differences between red, black and white quinoa. Black and Red have slightly less protein per serving than white does but higher in fiber and when it comes to vitamins and minerals, the white makes a better choice. However, they all are considered a complete protein and excellent source of dietary fiber. Red and black quinoa have stronger nutty & earthy aroma and crunchier than white quinoa, they can be steamed or cooked in a rice cooker but it takes longer time to cook red quinoa and especially black quinoa.
How to Cook Quinoa:
Thoroughly rinse quinoa before cooking. Rice Cooker: Add 1 cup of quinoa to 2 cups of water & cook for 15-20 minute or until water is absorbed.

Bi-color Quinoa Salad
200 g bicolor quinoa
30 g whole almonds
4 tbsp olive oil
Salt and pepper
Cook quinoa as indicated in instructions above.
Dice tomatoes, shred some lettuce leaves and slice thinly the cucumber.
Put everything in a bowl and mix with the lemon juice, olive oil and almonds.
Serve chilled and enjoy!
