Galbani Fresh Buffalo-Milk Mozzarella

Recipe: Little Summer Rolls à la Mozzarella

a dash of extra virgin olive oil
2 long stems of chives
2 slices of raw ham
1 pack Mozzarella Galbani
Wash the chives gently so as not to break the stems.
Get the melon and cut it in half. Remove the seeds by scraping them with a spoon. Make sure to scrape only the seeds and not the heart of the melon where the fruit flesh is most tender and most tasty.
Cut the melon into thin slices (according to your desired number of slices).
Peel each of the slice with a knife.
Get the Mozzarella Galbani and cut the same number of slices. Then cut each slice in half.
Create each roll:
Place the stem of chives in the center of your plate.
Place on top of two pieces of Mozzarella.
Cover with a slice of raw ham and add the slice of melon on top.
Roll both ends then tie with the chive stem as gently as possible so as not to break it.
Season lightly with a little salt and pepper to taste.
