Ingredients
4 lady fingers
200 g Greek yogurt or cream cheese
2 mango halves
2 apricot halves
100 ml lemon juice
1/2-1 tbsp Sunny Bio agave syrup
4 drops of liquid vanilla extract
2 egg
Directions
Separate the egg white and the yolk.
Beat the egg white until stiff.
Whisk the yogurt or cream with the egg yolk.
Add the syrup and the liquid vanilla extract.
Gently fold the egg white into the cream mixture with a spatula.
In a deep dish, pour lemon juice and quickly dip each lady finger.
Cut them in half.
Blend one half of the mango and apricot to obtain a coulis.
Cut the remaining halves into thin slices.
At the bottom of a large transparent glass, place 3 of the halved lady fingers and spread a little coulis on top, followed by half of the whipped cream mix, and a few slices of mango with apricots.
Repeat the steps in alternating layers.
Top with a few slices of mango and apricot.
Refrigerate for at least 1 hour just before serving.
