This wine with such a structure pairs well with meat, especially beef.
The grapes are hand-picked early in the morning – thus avoiding oxidation – during the third week of February. Then they are cooled and softly pressed. A pellicular maceration is performed to transfer the varietal character from the skin to the must. Alcoholic fermentation is carried out at low temperatures, in stainless steel tanks, to preserve the primary aromas.
Sandy to sandy-loamy soils located at 1,000 meters (almost 3,281 ft) above sea level. The climate typically presents warm days and cool nights, with an average temperature variation of 14°C (57.2°F) and an average annual rainfall of 280 mm (11.02 in). The yield is 12 tonnes per hectare (approximately 4.86 tonnes per acre) and drip irrigation is used. The grapevines are espalier trained. A color of deep ruby red with an expressive aroma, hints of spices such as black pepper, graphite, and cassis. On the palate, it has a compact structure with a taste of black fruits, subtle tannins, and a long finish.
