Roasting a lamb might look a little intimidating but it's really quite simple. These drippings of red wine will make an excellent flavorful sauce that will complement the lamb and make it an even more delicious roast.
Ingredients
1 Lamb Leg bone-in
1/2 cup dry red wine
4 cloves garlic
2 tbsp tarragon herbs
Salt and black pepper
Directions
Pound garlic in a mortar and pestle, sprinkle with salt.
Mash and add the tarragon herbs and black pepper until it makes a paste.
Rub the paste over the lamb and let sit for 35 minutes.
Preheat the oven to 350° F.
Put the lamb in the middle of the oven and roast until cooked depending on the desired doneness.
Bring out from the oven and let sit.
In a pan, bring red wine to a boil over moderate high heat while stirring constantly.
Season with salt and pepper.
Pour the juice over the lamb.
Serve and enjoy!
