The meat of the lamb is naturally lean, has relatively low fat and cholesterol contents, and has higher omega 3 fatty acids and other healthy fats compared to the other red meats. It can definitely be added in a balanced, healthy diet.

Preheat the oven to 450°.
Rub the rack with herbs and/or seasonings.
Roast on all sides evenly.
Remove from the oven and let rest.
Medium doneness temperature = 155° F or 68° C
Medium-well temperature = 160° F or 71° C.
Rest = temperature increases 5° F
Herbed Rack of Lamb
1 whole rack of lamb
1 teaspoon vegetable oil
1 1/2 tbsp extra virgin olive oil
3 large cloves of garlic, minced
4 tbsp parsley herbs
1 tbsp meat herbs
2 tsp tarragon herbs
Salt and ground black pepper
Rub lamb meat with salt and pepper.
Heat a heavy-duty pan over high heat.
Add oil and cook the rack until browned on all sides.
Mix garlic, herbs, olive oil, salt, and pepper in a bowl.
Spread the mixture all over the lamb meat.
Roast on a pre-heated oven in the center.
Flip and roast to cook evenly until golden brown.
Remove from the oven and let sit to rest.
Slice the ribs to serve.
