A cut from the top of lamb's hind leg, the heart of rump has natural tenderness and full of flavor. A thin layer of fat on top makes it great for roasting and barbecuing. These rumps can be stir-fried or cooked into amazing steaks. While less popular than the shoulder or leg, the lamb rump is an affordable and extremely versatile cut loved by restaurants and getting more popular worldwide.

Heat an ovenproof pan over medium heat, then sear your seasoned lamb in oil until browned all over. Transfer to pan to a preheated oven and cook at 200°C for 10–15 minutes or until cooked to your preference. Allow to rest before serving.
