INGREDIENTS
2 slabs Pork ribs
1/2 cup honey
1 tbsp salt
2 tbsp freshly ground pepper
1 tsp dry mustard
1 tsp ground ginger
2 tbsp soy sauce
2 tbsp chili-garlic sauce
1 tbsp fresh lime juice
1 tbsp butter
DIRECTIONS
Prepare the baby back ribs by removing the thin membrane on the inner side of the slab. Slice on one side and pull the whole skin gently off. Peeling this skin makes for a more tender meat. Season slab with salt and pepper and wrap in aluminum foil. Bake at 325°F for 2 to 2.5 hours on a baking sheet until tender and meat falls easily off the bone.
Prepare the glaze. Combine honey, mustard, ginger, soy sauce, garlic chili sauce, lime juice and butter and boil in a saucepan over high heat. Keep an eye on the mixture and make sure to stir and avoid burning. Reduce to low heat when slightly reduced, and simmer until mixture is reduced by half.
Take the baked ribs from aluminum foil and return to an aluminum wrapped baking sheet. Glaze with the honey mixture on both sides using a basting brush. Return to the oven heated to Broil temperature (500°F ) for another 5 to 7 minutes. Brush with remaining honey mixture to keep nicely glazed. Serve.
