Tenderloin Tips Barbecue Skewers

Ingredients

For the skewers:
1 lb Australian Tenderloin Tips
10 wooden skewers
3 red bell peppers, diced
1 large red onion, diced
1 tbsp olive oil
A pinch of garlic powder
Salt and ground black pepper

For the marinade:
1 tbsp lemon juice
1 tbsp red wine & raspberry vinegar
1 tbsp honey
3 tbsp soy sauce
2 tsp fish sauce
3 tbsp olive oil
2 tsp Dijon mustard
1 tbsp garlic, minced
Salt and ground black pepper

Directions

In a bowl, mix ingredients for the marinade.
Place the tenderloin tips in a large bowl and pour over marinade.
Refrigerate for 3-6 hours to allow to marinate.
Soak skewers in water for around 30 minutes before grilling.
When ready, preheat grill over medium-high heat.
In a separate bowl, place cut vegetables and toss with olive oil.
Sprinkle with salt, pepper, and garlic powder to season evenly.
Arrange skewers - tenderloin tips, bell peppers, tenderloin tips, onion - onto each kebab.
Lightly oil grill grates.
Grill skewers turning occasionally until desired doneness is achived.
Let rest for a few minutes.
Serve and enjoy!
