Grana Padano Cheese

Grana Padano is one of the finest cheeses, famous around the world. It is made from unpasteurized, semi-skimmed cow’s milk from two milking through a natural creaming process and aged for two years, generally. The cheese is one of the close competitors of the King of Cheeses, Parmigiano-Reggiano. The difference is, it is less crumbly, milder, and less complex.

Typically, cheese crystals are visible in this cheese that looks from solid-like to crystalline grains. Grana Padano is pale yellow in color with a natural rind that is thick and firm and an interior that is fragrant, flaking, and dry. It has an intense sweet full-bodied flavor that becomes more pronounced as it ages.

Its name came from the Italian name grana meaning grainy texture and Padano that refers to the cheese from Po River Valley in Italy. It has a protected designatation of origin or PDO, granted by the European Union law. It has been developed since the 12 century and it can last a long time.

This distinguished cheese is super abundant in calcium, phosphorous, and zinc. These minerals are essential for the bones and teeth, immunity, growth and maintenance of the body. Storage: Best stored in the refrigerator at around 4° C (39° F). Wrap in cotton or hemp cloth or in an aluminum foil. Make sure not to combine with other strong-flavoured cheeses in the fridge.

Grana Padano Potato Croquettes

Ingredients

2 cups mashed potatoes
1 cup breadcrumbs
150 g Grana Padano, grated
2 large eggs
parsley
salt & pepper

Directions

Pre-heat oven.
Mix the mashed potatoes with the egg yolk, the grated grana padano, and parsley.
Season with salt and pepper and stir until smooth then shape into croquettes.
Beat one egg in a bowl.
Place breadcrumbs in another bowl.
Dip into the bowl of beaten egg then into the bowl of breadcrumbs.
Place parchment paper on a baking sheet then arrange the croquettes.
Bake at 200 °C until golden brown in color.
Serve hot and enjoy!
