These free-range pigs are able to live as nature intended them to giving them a quality of life. This then improves significantly the quality of the meat.

This Pastured Pork comes from pigs that were truly raised on a pasture, in a wide spacious pens outdoor with plenty of sunlight and fresh air. They are allowed to freely graze on grass and also to eat a natural diet. Their feed is made in-house consisting of grass, cassava, copra cake, and chopped greens, corn and soybean as well as raw whey, their daily dose of probiotics that make them resist disease. Naturally-farmed pigs take at least 10 months to grow to a good size. Feeding patterns of Iberian pigs are followed, fed acorn and Slow Food principles.
NO animal by-products, NO commercial grain, NO growth hormones or therapeutic antibiotic treatment, and NO GMO corn or GMO soybean given to these free-range pigs.
Raising pigs on pasture adds real nutrients to the meat aside from giving it a richer flavor. This pork is darker in color - a higher pH score, and with good marbling. A higher pH score is linked to reduced loss in cooking, better capacity in holding water, firmness of the loin, low drip loss, improved processing quality.
The free-range lean ground pork is high in protein with many vitamins and minerals.
It is an excellent protein source providing along with its essential amino acids, one of the complete sources, helping the body grow and maintain its strength.
It is also rich in the mineral Selenium, a decent source of Phosphorous, Zinc and vitamin B complex, particularly Niacin with 43% for every one hundred grams serving of cooked lean ground pork.

Gratin of Ground Pork, Cauliflower, Potatoes and Green Beans
Serves 4 persons
4 heads of cauliflower
200 g green beans
500 g potatoes
100 g ground pork
40 g grated emmental cheese
4 tbsp all-purpose cream
Wash the vegetables.
Cut the cauliflower into small florets, peel and dice potatoes. Steam.
Meanwhile, sauté the free-range lean ground pork. Season with salt, pepper, add herbs or spices of your choice.
Preheat oven to 240 ° C.
In a baking dish, place a layer of meat, cover with a layer of potatoes, green beans and cauliflower. Place 2 tablespoons of cream.
Repeat for every baking dish and finish with the remaining cream and grated emmental.
Bake for about 20 minutes and switch to grill to finish gratinating.
