Egg White Omelet with Spinach & Cottage cheese


A wholesome breakfast is just the right way to start the day. This healthy habit may help positively improve control of blood sugar and insulin sensitivity, especially essential for people with diabetes. 

An omelet is an excellent choice for breakfast, mixed in with diabetic-friendly ingredients, one can not go wrong.


INGREDIENTS

3 pcs egg whites
1 tsp olive oil
1 cup spinach
60 g cottage cheese
1 tbsp grated parmesan cheese
Salt and ground pepper to taste


DIRECTIONS

In a medium bowl, whisk together egg whites and 1 tbsp of water. Season with salt and pepper and set the whites aside.

Heat the olive oil over medium-high heat in a nonstick skillet. Add spinach and season with salt and pepper. Cook until wilted and tender, about a minute.

Add the egg whites and cook until they are nearly set.

Once the eggs are cooked, about 2 minutes, add cottage cheese on top of the omelet, sprinkle with Parmesan, season with salt and pepper to taste.

Slide the omelet gently onto a serving plate.
Serve and enjoy!
