A good spinach dip is probably one of the few kid-friendly spinach concoctions moms can whip up. Spinach can even out the indulgence of sour cream, and so it is great for a movie night snack. Definitely a true crowd pleaser. You need practically 5 minutes to make it. Ready to try?
INGREDIENTS
1 cup whole leaf spinach (chopped)
¼ cup bacon (diced)
1 cup sour cream
1/3 cup onions (thinly chopped)
2 tablespoons extra-virgin olive oil (optional)
DIRECTIONS
Defrost spinach 15 to 30 minutes in your refrigerator, and chop. Alternatively, you can try fresh spinach for immediate use. However, I like this frozen version as I can stock it in my freezer and it can be ready for use anytime. Combine this with sour cream, onions. Stir until well combined. Cover and refrigerate for a few hours.
Fry diced bacon in olive oil. If your bacon has ample fat content. You can do away with the olive oil and simply fry the meat with no oil, and the fat will render out of the meat as you fry it.
Top the spinach dip mixture with bacon. Serve.
