Premium Duck Leg (Bone-in): Thigh & Drumstick

Take your culinary repertoire to new heights with our bone-in duck leg, featuring both the thigh and drumstick. This gourmet cut is celebrated for its distinctive taste and tender texture. When cooked using techniques like roasting or the classic confit method, it delivers a rich, savory flavor, succulent meat, and irresistibly crispy skin.

Sourced for quality, these duck legs are characterized by their dark, flavorful meat, particularly well-suited for slow-cooking techniques. The naturally higher fat content contributes to exceptional juiciness and a distinct, richer flavor profile, compared to other poultry options like chicken.

Duck legs are a versatile ingredient for many dishes. Serve them as a main course with vegetables or potatoes, or use their rich flavor in salads, hearty stews, pasta dishes, or even gourmet sandwiches.

How to Cook Duck Legs

Pan: Starting with the skin side, cook over medium heat for 5 minutes, taking care to remove the fat as it melts. Turn the duck leg over and cook for 5 minutes. Then return to the skin side and continue cooking for 5 minutes for rare and 7 minutes for medium.

Oven (210°C): Take the thighs out of their bag and place skin side up in an oven dish. Cook in a preheated oven for 35 minutes.

Duck Leg And Thigh With Mashed Potatoes And Apricot Jam
*recipe adapted from Villa Germania

Ingredients

1 pack Duck Leg Bone-in
Fresh herbs (rosemary, thyme, sage)
600g of mashed potatoes
200g of cream cheese
Apricot jam
Spicy paprika, black pepper, and salt

Directions

Prepping the Duck:

  • Make a circular incision around the end of each duck leg and thigh to sever the tendons. This helps the meat separate more easily from the bone during cooking.
  • Season generously with salt, pepper, and your choice of fresh herbs.
  • Cover and marinate in the refrigerator for at least six hours.

Cooking the Duck:

  • Preheat your oven to 150°C (300°F).
  • Arrange the duck legs skin-side up in a baking dish.
  • Bake for 2.5 to 3 hours until the meat is tender.
  • For a crispier finish, place the duck back in a hot oven for an additional 20 minutes after the initial cooking time.

Preparing the Mashed Potatoes:

  • Reheat the cooked potatoes until soft.
  • Mash them together with cream cheese and heavy cream. If the mixture is too thick, add a bit of the reserved potato cooking water to reach your desired consistency.

Plating the Dish:

  • Spoon a portion of mashed potatoes onto the center of each plate.
  • Place a duck leg and thigh on top of the mash.
  • Drizzle with pan juices or roast sauce for added flavor and shine.
  • Top with a small spoonful of apricot jam.
  • Garnish with chopped chives and a sprinkle of spicy paprika.
