How to Cook Duck Legs
Pan: Starting with the skin side, cook over medium heat for 5 minutes, taking care to remove the fat as it melts. Turn the duck leg over and cook for 5 minutes. Then return to the skin side and continue cooking for 5 minutes for rare and 7 minutes for medium.
Oven (210°C): Take the thighs out of their bag and place skin side up in an oven dish. Cook in a preheated oven for 35 minutes.

Ingredients
1 pack Duck Leg Bone-in
Fresh herbs (rosemary, thyme, sage)
600g of mashed potatoes
200g of cream cheese
Apricot jam
Spicy paprika, black pepper, and salt
Directions
Prepping the Duck:
- Make a circular incision around the end of each duck leg and thigh to sever the tendons. This helps the meat separate more easily from the bone during cooking.
- Season generously with salt, pepper, and your choice of fresh herbs.
- Cover and marinate in the refrigerator for at least six hours.
Cooking the Duck:
- Preheat your oven to 150°C (300°F).
- Arrange the duck legs skin-side up in a baking dish.
- Bake for 2.5 to 3 hours until the meat is tender.
- For a crispier finish, place the duck back in a hot oven for an additional 20 minutes after the initial cooking time.
Preparing the Mashed Potatoes:
- Reheat the cooked potatoes until soft.
- Mash them together with cream cheese and heavy cream. If the mixture is too thick, add a bit of the reserved potato cooking water to reach your desired consistency.
Plating the Dish:
- Spoon a portion of mashed potatoes onto the center of each plate.
- Place a duck leg and thigh on top of the mash.
- Drizzle with pan juices or roast sauce for added flavor and shine.
- Top with a small spoonful of apricot jam.
- Garnish with chopped chives and a sprinkle of spicy paprika.
