Duck confit or confit de canard in French, is dish seen as a specialty of Gascony, a province in Southwestern France. The duck confit is prepared by salting duck and cooking it in its own fat, a centuries-old process of meat preservation. The meat is rubbed with salt, garlic, and sometimes herbs such as thyme, then covered and refrigerated for up to 36 hours.

Keep frozen at -18°C before using.
Do not refreeze after defrosting.
When defrosting, leave the dish in the refrigerator overnight or leave at room temperature for 20 to 30 minutes.
Reheat by transferring the contents into an ovenproof dish and heating either in the oven for 325°F (170°C) or use the microwave for a minute, or transfer to a pan and reheat on the stovetop until fully heated through.
