This wine is a fine companion of poultry or pork, rich shellfish, saltwater fish, crab, and lobster, and certain cheeses, such as Comté, Beaufort, Emmental, or goats.

Maturation: 4 to 8 years. Age makes it a little more golden and spicy.
Aging: the vinification is traditional: alcoholic and malolactic fermentation in native flora regulated between 20 - 22 °C, 12 months aging in stainless steel vats on lees. Movements and inputs are limited to the strict minimum in order to guarantee an authentic taste of the land.
