Ingredients
1/2 Organic Whole Chicken
250 g roughly chopped okra
100 g diced bacon
1 onion sliced into rings
150 g cherry tomatoes
1 clove of garlic, chopped
chopped seedless finger pepper (to taste)
chopped green onions
juice of 1/2 orange
100 ml dry white wine
Salt, pepper, and olive oil to taste
Directions
Season the chicken pieces with salt and pepper.
In a large skillet, cook the diced bacon over medium heat until crispy.
Set aside once cooked, without removing the bacon fat.
Add the sliced onion and chopped garlic to the skillet. Sauté until the onion is translucent.
Add the chicken pieces to the skillet and brown on all sides.
Add the chopped okra and cherry tomatoes to the skillet, stir to combine.
Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
Stir in the cooked bacon and let it heat through for a couple of minutes.
Serve hot, garnished with fresh herbs if desired.
