Ingredients
4 oz. lean Beef Tenderloin, thinly sliced
1 tsp olive oil
1 cup spinach
1 small tomato, seeded and sliced
1 oz. Traditional Italian mozzarella cheese, grated
Directions
Heat a nonstick pan over high heat.
Coat the tenderloin slices with oil.
Season with salt and pepper.
Cook for 1 minute on each side.
Transfer to a plate.
Reduce heat to medium-low.
Return beef to the nonstick frying pan.
Top with baby spinach, tomato slices and mozzarella.
Season with salt and pepper, then cover.
Cook for 5 minutes or until mozzarella has melted.
Serve immediately and enjoy!
