How to Cook Certified Angus Beef® Ribeye

Best results assume ~1-inch (2.5 cm) thick steak.

Thawing (Preferred):

  • Keep the steak in its sealed pack. Thaw overnight in the refrigerator (6–12 hours) on a plate to catch drips.
  • Quick-thaw option: Keep sealed, submerge in cold water, changing water every 30 minutes until pliable.

Pan-Sear (High Heat):

  1. Prep: Pat dry. Season generously with kosher salt & black pepper (or your preferred rub).
  2. Sear: Heat a heavy skillet (cast iron preferred) over high heat with a thin film of high-smoke-point oil.
  3. Cook:
    • Rare (125°F / 52°C): ~1–2 min per side + brief edges.
    • Medium-Rare (130–135°F / 54–57°C): ~2–3 min per side.
    • Medium (140–145°F / 60–63°C): ~3–4 min per side.
      Use an instant-read thermometer for accuracy.
  4. Finish: Add butter + thyme/rosemary, baste 30–60 seconds.
  5. Rest: Transfer to a warm plate, tent loosely, rest 5–7 minutes.

Grill (Direct High Heat):

  • Sear over direct high heat 2–3 minutes per side, then move to medium heat and cook to target doneness. Rest 5–7 minutes.

Reverse-Sear (Max control):

  1. Low roast at 225°F (107°C) until internal temp is 10–15°F (6–8°C) below target.
  2. Sear hard in a hot skillet or over high grill heat for crust.
  3. Rest 5–7 minutes.

truly exceptional taste
