Mini Shells with Creamy Butternut Squash Sauce

2 - 3 cloves garlic, minced
1 onion, cut diced
1 cup mushrooms, thinly sliced
1 tsp. umeboshi vinegar - optional
salt and pepper (to taste)
½ lb. mini shells, cooked & drained
2 zucchini, about 1 ½ cups, diced small (broccoli can be substituted)
½ red bell pepper, diced small - optional
2 tbsp of Olive Oil
3 - 4 cups Imagine® Organic Creamy Butternut Squash Soup
Fresh chopped parsley (to taste)
In a large saucepan, add and sauté the garlic, onion, mushrooms, zucchini & red bell pepper using olive oil.
Cook until all tender, about 5 to 7 minutes.
Add the creamy soup, umeboshi vinegar, shells, salt, and pepper. Bring to simmer, stir well.
Serve hot & garnish with fresh chopped parsley.
