Buttermilk Raspberry Ice Cream Sandwich
1 pint Buttermilk & Raspberry Ice Cream
1.5 cup frozen raspberries
3 tbsp sugar
1 pack graham crackers
In a pan, heat raspberries and sugar over medium heat.
Cook until syrupy in texture, stirring constantly.
Once cooked, pass through a fine strainer into a bowl. Let cool.
Tear the graham crackers into their squares and place on a plate.
Scoop a spoon of ice cream and spread on a square of cracker.
Garnish with the raspberry mixture.
Cover with another square.
Serve and enjoy!
