Buckwheat is a protein-rich, grain-like crop.  It is known as a pseudocereal because its use for cooking is the same as how you would use cereals. These have hulls, comparable to a sunflower seed hull, which is normally removed before use in food preparations.

Serving Ideas:

In Asia, buckwheat seeds are used for a simple meal called Kasha. The seeds are boiled for 20 minutes, adding a little butter, salt, and spices. Buckwheat can be comparable to preparing and eating rice, but it has more nutritional value. Ground buckwheat seeds can be hulled and turned into flour to make buckwheat noodles, and bread, and pancakes.

Buckwheat is relatively high in fiber, Vitamin B6, protein, iron, and magnesium, among other minerals. Pumpkin seeds are full of nutrients; phosphorus, manganese, magnesium, iron, zinc, among others. It also contains antioxidants, polyunsaturated fatty acids, riboflavin, potassium, and folate.
