Creamy Mushroom Soup
Borges Extra Light Olive Oil
2 spring onions
3 ripe tomatoes
1 sprig of thyme
1 1/2 liters Vegetable stock
20 grams Almonds
3 cloves of garlic, chopped
In high heat, sauté chopped onions, carrots, and spring onions. After two minutes, add the skinned and chopped tomatoes and thyme. Switch to low heat, then add the mushrooms and cook for another 6 minutes. Add the stock and cook for 25 minutes more. Add the crushed almonds and chopped garlic. Blend the mixture and garnish with some mushrooms.
