Mango &Feta Cheese Whole Wheat Pasta Salad with Herb Dressing
- - 250 ml (8½ US fl oz) Borges Extra light olive oil
- -Small bunch of basil
- -Handful of dried oregano
- -Sprig of fresh thyme
- -1/2 tsp Peppercorns
- -Pinch of chilli pepper (optional)
DirectionsBlanch and dry the basil leaves. Crush this with the olive oil and pour into a glass bottle. Crush and add peppercorns, together with the oregano and fresh thyme. Marinate this for a whole day. This herb oil can be used, as well, for any of your dishes, salads and pasta.
Cook the Penne until "al dente". Wash with cold water and dress with the herb-flavoured olive oil.
Cut the mango felsh into small cubes. Peel, deseed and cube the tomatoes. Mix with the cubed tomatoes and mangos, corn nuts and feta cheese with the pasta and dress with the herb sauce.
